Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

8 oz (225 g) baby bella mushrooms, sliced

2 tablespoons unsalted butter

3 cloves garlic, minced

1 cup shredded mozzarella cheese (or a mix of mozzarella and cheddar)

1/4 cup cream cheese, softened

1 teaspoon dried thyme (or Italian seasoning)

1/2 teaspoon paprika

Salt and black pepper, to taste

1 tablespoon fresh parsley, chopped (optional, for garnish)

 

 

 

 

Instructions

Prepare the Chicken

Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Be sure not to cut all the way through.

Cook the Mushroom Filling

Heat olive oil and butter in a skillet over medium heat. Add the sliced mushrooms and cook until soft and golden, about 5–7 minutes. Stir in the garlic and cook for another minute until fragrant. Remove from heat and let cool slightly.

Make the Filling

In a bowl, combine the cooked mushrooms with cream cheese, half of the shredded cheese, thyme, salt, and pepper. Mix until well combined.

Stuff the Chicken

Spoon the mushroom mixture evenly into each chicken breast pocket. Secure with toothpicks if needed to keep the filling inside.

Season and Sear

Season the outside of the chicken with paprika, salt, and pepper. In the same skillet, sear the chicken over medium-high heat for 3–4 minutes per side until golden.

Bake to Perfection

Transfer the chicken to a baking dish. Sprinkle the remaining cheese over the top and bake in a preheated oven at 190°C (375°F) for 15–20 minutes, or until the chicken is fully cooked and the cheese is melted.
