There’s something timeless about a meal that can feed a full table without costing much—and these slow cooker porcupine meatballs are exactly that. Passed down from my grandmother’s kitchen, this simple recipe transforms just four humble ingredients into a hearty, satisfying dish. As they cook low and slow, the meatballs become incredibly tender while the rice inside softens and “pokes” out, giving them their classic porcupine look. Everything simmers together in a rich tomato sauce that feels warm, nostalgic, and deeply comforting.

Ingredients

1 lb (450 g) ground beef

1/2 cup uncooked white rice

1 can (10.5 oz / 300 g) tomato soup

1/2 cup water

Instructions

Mix the Meatballs

In a large bowl, combine the ground beef and uncooked rice. Mix gently until just combined.

 

 

 

Shape

Roll the mixture into small to medium-sized meatballs (about 1 to 1½ inches each).

Prepare the Sauce

In a separate bowl, whisk together the tomato soup and water until smooth.

Slow Cook

Place the meatballs into the slow cooker in a single layer if possible. Pour the tomato sauce evenly over the top.

Cook

Cover and cook on low for 6–7 hours or high for 3–4 hours, until the meatballs are fully cooked and the rice is tender.

To Serve

Spoon the meatballs straight from the slow cooker with plenty of that rich tomato sauce. They’re perfect over:

Creamy mashed potatoes

Buttered egg noodles

Steamed white rice (for extra stretching)
