Ingredients
1 package cheese tortellini (fresh or frozen)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/2 cup black olives, sliced
1 cup mini mozzarella balls (pearls)
1/2 cup pepperoni slices
Dressing & Extras
1/2 cup zesty Italian dressing
1/4 cup grated parmesan cheese
Salt and black pepper, to taste
Optional: fresh basil or parsley for garnish
Instructions
Cook the tortellini according to package instructions. Drain and rinse under cold water to cool completely.
Prepare the vegetables by chopping the tomatoes, cucumber, and red onion.
In a large bowl, combine the cooled tortellini, vegetables, olives, mozzarella, and pepperoni.
Pour in the Italian dressing and gently toss until everything is well coated.
Sprinkle with grated parmesan cheese, then season with salt and pepper to taste.
Cover and refrigerate for at least 30 minutes to let the flavors blend.
