Ingredients

1 can (28 ounces) whole peeled tomatoes, with juice

2 cans (10 ounces each) diced tomatoes with green chilies

1/4 cup finely chopped onion

1 garlic clove, minced

1 fresh jalapeño, quartered and thinly sliced (remove seeds for milder heat, or leave them in for extra spice)

1/4 teaspoon granulated sugar

1/4 teaspoon salt, or to taste

1/4 teaspoon ground cumin

1/2 cup fresh cilantro leaves, chopped (or more, to taste)

Instructions

In a blender or food processor, combine the whole tomatoes with their juice, diced tomatoes with green chilies, chopped onion, jalapeño, minced garlic, sugar, salt, cumin, fresh cilantro, and lime juice.

Pulse the mixture until it reaches your preferred consistency. For a chunky salsa, pulse about 8 to 10 times. For a smoother texture, continue pulsing until well blended.

Taste the salsa using a tortilla chip, then adjust the seasoning as needed. Add extra salt, lime juice, or cilantro to suit your taste.

Transfer the salsa to an airtight container and refrigerate for at least 1 hour before serving. This resting time allows the flavors to meld beautifully.
