Ingredients

4 cups frozen hashbrowns, thawed

2 cups shredded cheddar cheese

1 can (10.5 ounces) cream of chicken soup

1 cup sour cream

1/2 cup unsalted butter, melted

1/2 cup onion, finely diced

Salt and black pepper, to taste

Optional Topping

1 cup crushed cornflakes or buttery crackers

2 tablespoons melted butter

 

 

 

 

Instructions

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

In a large mixing bowl, combine the thawed hashbrowns, shredded cheddar cheese, cream of chicken soup, sour cream, melted butter, and diced onion.

Season with salt and black pepper to taste, then stir until everything is evenly mixed.

Spread the mixture evenly into the prepared baking dish.

If using, combine the crushed cornflakes or crackers with the melted butter and sprinkle evenly over the top.

Bake for 45 to 50 minutes, or until the casserole is hot, bubbly, and golden brown on top.
