Tender, juicy pork chops baked in a luscious pineapple glaze make for a dinner that feels both comforting and special. Ingredients

4 bone-in or boneless pork chops

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 can (20 ounces) pineapple rings, with juice reserved

1/2 cup brown sugar

1/4 cup soy sauce

2 cloves garlic, minced

1 tablespoon Dijon mustard (optional)

1/2 teaspoon ground ginger (optional)

1 tablespoon cornstarch (optional, for a thicker glaze)

2 tablespoons water (if using cornstarch)

Fresh parsley or sliced green onions, for garnish

 

 

 

 

Instructions

Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet.

Season and Sear the Pork Chops

Pat the pork chops dry and season both sides with salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until lightly golden. Transfer them to the prepared baking dish.

Prepare the Pineapple Glaze

In a medium bowl, whisk together the reserved pineapple juice, brown sugar, soy sauce, minced garlic, Dijon mustard, and ground ginger until well combined.

Assemble the Dish

Arrange the pineapple rings over and around the pork chops. Pour the glaze evenly over the chops and pineapple.

Bake

Bake uncovered for 25–30 minutes, or until the pork chops reach an internal temperature of 145°F (63°C), basting once or twice with the pan juices during baking.

Optional: Thicken the Glaze

For a thicker sauce, remove the pork chops and pineapple from the baking dish. Pour the pan juices into a small saucepan. Mix the cornstarch with water to create a slurry, then whisk it into the sauce. Simmer over medium heat for 2–3 minutes until thickened.

Serve

Spoon the glaze over the pork chops and garnish with fresh parsley or sliced green onions.
