When you need a warm, satisfying dinner without spending hours in the kitchen, this simple beef enchilada casserole is the perfect solution. Layered with seasoned beef, tender tortillas, rich enchilada sauce, and plenty of melted cheese, it’s a hearty, family-friendly meal that tastes like pure comfort. Ingredients

1 pound ground beef

1 can (19 ounces) red enchilada sauce

8 small flour tortillas, cut into halves or quarters

2 cups shredded cheddar cheese

Optional Toppings

Sour cream

Sliced green onions

Salsa

Chopped fresh cilantro

Diced tomatoes

Instructions

Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Cook the Beef

In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart as it cooks. Drain any excess grease.

 

 

 

 

Begin Layering

Spread a thin layer of enchilada sauce on the bottom of the prepared baking dish.

Add the First Layer

Arrange a layer of tortilla pieces over the sauce. Top with half of the cooked ground beef, one-third of the remaining enchilada sauce, and one-third of the shredded cheddar cheese.

Repeat the Layers

Add another layer of tortillas, followed by the remaining beef, another third of the enchilada sauce, and another third of the cheese.

Finish the Casserole

Top with a final layer of tortillas, the remaining enchilada sauce, and the rest of the cheddar cheese.

Bake

Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 to 15 minutes, until the cheese is melted, bubbly, and lightly golden.

Rest and Serve

Let the casserole rest for 5 to 10 minutes before slicing and serving.
