Instructions
Prepare the Batter
In a large mixing bowl, whisk together the flour, sugar, and salt.

Gradually pour the wet ingredients into the dry ingredients, whisking continuously until the batter is completely smooth and free of lumps.
Rest the Batter
Let the batter rest for 20 to 30 minutes at room temperature. This helps create soft, tender crepes.
Heat the Pan
Heat a nonstick skillet or crepe pan over medium heat.
Lightly grease with a small amount of butter.
Cook the Crepes
Pour about 1/4 cup of batter into the center of the pan.
Immediately swirl the pan to spread the batter into a thin, even circle.

Flip carefully and cook for another 30 to 60 seconds.
Repeat
