Ingredients
14 oz (400 g) filet mignon or beef tenderloin, cut into bite-sized pieces
1 tablespoon olive oil
1 tablespoon unsalted butter
1 small onion, finely chopped
5 oz (150 g) mushrooms, sliced
2 cloves garlic, minced
1/2 cup beef broth
1/2 cup heavy cream
1 package (5.2 oz / 150 g) garlic and herb Boursin cheese
1 teaspoon Dijon mustard (optional)
Salt and freshly ground black pepper, to taste
1 tablespoon fresh parsley, chopped, for garnish
Instructions
Season the filet mignon pieces generously with salt and black pepper.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the beef and sear for 2–3 minutes, turning until browned on all sides. Remove from the skillet and set aside.
In the same skillet, add the chopped onion and cook for 2 minutes until softened.
Stir in the sliced mushrooms and cook for 4–5 minutes, until golden and tender.
Add the minced garlic and cook for 30 seconds, until fragrant.
Pour in the beef broth, scraping up any browned bits from the bottom of the pan.
Reduce the heat to medium-low and stir in the heavy cream and Boursin cheese until melted and smooth.
Add the Dijon mustard, if using, and stir well.
Return the beef to the skillet and simmer gently for 3–4 minutes, until heated through and coated in the creamy sauce.
Taste and adjust seasoning with additional salt and pepper if needed.
Garnish with fresh parsley before serving.
