Ingredients (Serves 2–3)
250 g pasta (penne, fusilli, or spaghetti)
300 g steak (sirloin or fillet), thinly sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
2 cloves garlic, minced
3 tablespoons olive oil (or neutral oil)
2 tablespoons soy sauce (optional but recommended)
1 teaspoon paprika or sweet chili powder
Salt and black pepper, to taste
Preparation Method
1. Cook the pasta
Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions (about 8–10 minutes).
Before draining, reserve a small cup of pasta water, then drain and set aside.
2. Prepare and sear the steak
Slice the steak thinly against the grain to keep it tender. Season lightly with salt and black pepper.
Heat a large pan or wok over high heat until very hot. Add a little oil, then sear the steak quickly for 1–2 minutes until browned on the outside but still juicy inside.
Remove from the pan and set aside.
3. Cook the peppers
In the same hot pan, add a little more oil if needed. Add the sliced peppers and stir-fry for 2–3 minutes until slightly tender but still crisp. Add the garlic in the last 30 seconds to avoid burning.
4. Combine everything
Return the steak to the pan. Add the cooked pasta and a splash of reserved pasta water. Stir in soy sauce and paprika. Toss everything over high heat for 1–2 minutes until well coated and slightly glossy.
