Crispy Chicken Rolls with Gooey Cheese & Savory Mushrooms
These golden chicken rolls are crispy on the outside, creamy and cheesy on the inside, and packed with delicious mushroom flavor. Best of all, they’re pan-fried instead of baked, making them quick, easy, and incredibly satisfying for lunch or dinner.
Ingredients
For the Chicken Rolls
2 chicken fillets
2 eggs
Salt, to taste
Black pepper, to taste
3 tbsp flour (24 g)
1/2 cup breadcrumbs (30 g)
1 tbsp mayonnaise (15 g)
150 g mozzarella cheese, shredded
100 g cheddar cheese, grated
For the Filling
200 g mushrooms, finely chopped
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp butter or olive oil
Fresh parsley, chopped
For Frying
Vegetable oil, as needed
Instructions
Prepare the Filling
Heat butter or olive oil in a skillet over medium heat. Add the onion and cook until soft. Stir in the mushrooms and garlic, then sauté until the mushrooms release their moisture and become golden. Season with salt and pepper. Remove from heat and let cool slightly.
Prepare the Chicken
Slice the chicken fillets horizontally to create thin cutlets. Place them between sheets of plastic wrap and gently pound until evenly thin.
Make the Cheese Mixture
In a bowl, combine the mozzarella, cheddar, mayonnaise, and chopped parsley. Add the cooked mushrooms and mix well.
Fill and Roll
Place a spoonful of filling onto each chicken cutlet. Roll tightly and secure with toothpicks if needed.
Coat the Rolls
Beat the eggs in one bowl. Place flour in another bowl and breadcrumbs in a third. Coat each chicken roll first in flour, then egg, and finally breadcrumbs.
Pan-Fry Until Golden
Heat vegetable oil in a frying pan over medium heat. Fry the rolls for 4–5 minutes per side, turning carefully, until crispy, golden brown, and fully cooked inside.
Serve Hot
Remove toothpicks before serving. Enjoy with mashed potatoes, fresh salad, or your favorite dipping sauce.
