Best Fluffy Pancakes

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 ¼ cups milk
  • 1 large egg
  • 3 tablespoons melted butter (or vegetable oil)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Mix dry ingredients
    In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Mix wet ingredients
    In another bowl, whisk the milk, egg, melted butter, and vanilla.
  3. Combine
    Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
    Do not overmix—a few lumps are okay.
  4. Rest the batter
    Let the batter rest for 5 minutes to help the pancakes turn fluffy.
  5. Heat the pan
    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  6. Cook pancakes
    Pour about ¼ cup batter per pancake.
    Cook until bubbles form on the surface and the edges look set (about 2 minutes).
    Flip and cook another 1–2 minutes until golden.
  7. Serve
    Serve warm with butter, maple syrup, honey, or fresh fruit.

 

Tips for Extra Fluffiness

  • Don’t press the pancakes while cooking
  • Make sure the baking powder is fresh
  • Cook on medium heat—not too hot

  • Chocolate chips
  • Blueberries
  • Banana slices
  • Cinnamon (½ teaspoon)
