Best Fluffy Pancakes
Ingredients
- 1 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 ¼ cups milk
- 1 large egg
- 3 tablespoons melted butter (or vegetable oil)
- 1 teaspoon vanilla extract (optional)
Instructions
- Mix dry ingredients
In a large bowl, whisk together the flour, baking powder, salt, and sugar. - Mix wet ingredients
In another bowl, whisk the milk, egg, melted butter, and vanilla. - Combine
Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
Do not overmix—a few lumps are okay. - Rest the batter
Let the batter rest for 5 minutes to help the pancakes turn fluffy. - Heat the pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. - Cook pancakes
Pour about ¼ cup batter per pancake.
Cook until bubbles form on the surface and the edges look set (about 2 minutes).
Flip and cook another 1–2 minutes until golden. - Serve
Serve warm with butter, maple syrup, honey, or fresh fruit.
Tips for Extra Fluffiness
- Don’t press the pancakes while cooking
- Make sure the baking powder is fresh
- Cook on medium heat—not too hot
