Golden Caramelized Onion Egg Bake (3-Ingredient Comfort Classic)

- Golden Caramelized Onion Egg Bake (3-Ingredient Comfort Classic)
This humble, low-carb onion egg bake transforms just a few pantry staples into something warm, satisfying, and quietly indulgent. Inspired by old-fashioned kitchen wisdom, it’s a crustless, flourless “onion pie” with silky eggs and deeply caramelized onions baked into a soft, golden slice. Simple, budget-friendly, and surprisingly rich in flavor—this is comfort food at its most effortless.
Servings: 4
Ingredients
2 tablespoons neutral oil or butter (for cooking and greasing)
2 large yellow onions, thinly sliced
8 large eggs
1 teaspoon fine salt (plus more to taste)
Directions
Preheat the oven to 350°F (175°C). Lightly grease an 8×8-inch (or similar) baking dish with a bit of the oil or butter, coating the bottom and sides well.
Caramelize the onions:
Heat the remaining oil or butter in a large skillet over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring often, for about 20–25 minutes until the onions turn soft, golden, and deeply caramelized. Lower the heat if needed to prevent burning.
Prepare the eggs:
In a large bowl, whisk the eggs with the salt until smooth and slightly frothy.
Combine and assemble:
Let the onions cool slightly, then fold them into the egg mixture, making sure they’re evenly distributed. Pour everything into the prepared baking dish.
Bake to perfection:
Bake for 30–35 minutes, or until the center is set and the top is lightly golden. A knife inserted in the center should come out clean.
Rest and serve:
Let the bake rest for 5–10 minutes before slicing into thick squares.
Serving Ideas
Serve warm with a crisp green salad tossed in a tangy vinaigrette to balance the richness. It also pairs beautifully with fresh tomatoes, sliced cucumber, or a dollop of yogurt or sour cream.
For brunch, add fresh fruit and coffee on the side. For a light dinner, serve it with roasted vegetables or a simple soup.
Leftovers are just as delicious at room temperature—perfect for lunchboxes alongside crunchy veggies or pickles.
Simple ingredients, slow cooking, and a little patience—that’s all it takes to turn everyday basics into something truly comforting.
