Ingredients
1 cup cottage cheese (full-fat or low-fat)
2 large eggs
½ ripe banana, mashed well
½ cup oat flour

1 tablespoon honey or maple syrup (optional, for sweetness)
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch of salt
½ cup blueberries (fresh or frozen)

½ tsp cinnamon
1 tbsp chia seeds or ground flaxseed
Lemon zest (½ tsp) for extra brightness
Instructions
Step 1: Blend the Batter
Add cottage cheese, eggs, mashed banana, honey, and vanilla to a blender or food processor.
Blend until smooth and creamy (no visible curds).
Step 2: Mix Dry Ingredients
Pour the blended mixture into a bowl.
Gently whisk in:
Oat flour
Baking powder
Salt
Optional cinnamon or seeds
Step 3: Fold in Blueberries
Carefully fold in blueberries so they don’t burst.
Cooking Methods
