Ingredients
1 lb ground beef
4 medium potatoes, diced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 small onion, chopped
2 cups shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper, to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
Prepare the Potatoes
Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10–12 minutes, stirring occasionally, until golden and tender.
Cook the Beef
Push the potatoes to one side of the skillet. Add the ground beef and chopped onion. Cook until the beef is browned and fully cooked, breaking it apart with a spoon as it cooks.
Add the Vegetables
Stir in the sliced bell peppers, garlic powder, paprika, Italian seasoning, salt, and black pepper. Cook for another 5 minutes until the peppers are slightly softened.
Make It Cheesy
Sprinkle the shredded cheddar cheese evenly over the top. Cover the skillet with a lid and let the cheese melt for 2–3 minutes until gooey and bubbly.
