Introduction
The Firecracker Bacon Cheddar Cheeseburger Stuffed Onion Bomb is a bold, juicy twist on a classic cheeseburger. A hollowed sweet onion becomes the flavorful shell, stuffed with seasoned ground beef, smoky bacon, sharp cheddar, and spicy jalapeños. Wrapped in bacon and brushed with barbecue sauce, these onion bombs are grilled (or baked) until tender, melty, and slightly charred. Ingredients
The “Shell”
4–5 large yellow or white sweet onions (skins removed)
The Filling
1 lb (450g) ground beef (80/20 for best juiciness)
1/2 cup cooked bacon, chopped
1 cup sharp cheddar cheese (cubed or thick shredded)
2 jalapeños, finely diced (remove seeds for less heat)
1/2 small onion, finely diced (optional, for extra flavor)
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1/2 tsp chili powder
For Wrapping & Glaze
8–10 bacon strips (thin-cut works best)
1/2 cup barbecue sauce (your favorite brand)
Toothpicks (optional, to secure bacon)
Instructions
1️⃣ Prepare the Onions
Cut off the top and bottom of each onion.
Slice the onion in half across the middle (creating two “cups”).
Carefully remove the inner layers, leaving 2–3 outer layers intact to form a sturdy shell.
Set aside the larger outer “cups” for stuffing. (Chop and save inner layers for another recipe.)
2️⃣ Make the Filling
In a large bowl, combine ground beef, chopped bacon, cheddar, jalapeños, garlic, Worcestershire sauce, and seasonings.
Mix gently until just combined (don’t overmix to keep it tender).
3️⃣ Stuff the Onion Bombs
Fill one onion cup with the beef mixture.
Press firmly and slightly mound it in the center.
Top with extra cheese if desired.
Place another onion cup on top to form a “ball.”
Wrap the entire onion bomb with 2 strips of bacon, crisscrossing to secure.
Use toothpicks if needed to hold everything in place.

Preheat grill to medium heat (375–400°F / 190–200°C).
Place onion bombs on indirect heat.
