- 1 cup powdered sugar
- ½ cup creamy or chunky peanut butter
- 3 tablespoons unsalted butter, softened
- 16 oz white melting chocolate (or white chocolate chips)
Instructions:
- Prepare the Peanut Butter Mixture:
- In a medium mixing bowl, combine the powdered sugar, peanut butter, and softened butter.
- Mix until smooth and fully incorporated. The mixture should be firm enough to roll into balls.
- Form the Truffles:
- Using a small cookie scoop or spoon, shape the mixture into 1-inch balls.
- Place the balls on a baking sheet lined with parchment paper.
- Chill in the refrigerator for at least 30 minutes, or until firm.
- Coat with Chocolate:
-
- Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, ensuring it is fully coated.
- Place coated truffles back onto the parchment-lined baking sheet.
- Decorate (Optional):
- Before the chocolate sets, you can sprinkle holiday-themed sprinkles, crushed candy canes, or drizzle with dark/milk chocolate for a festive touch.
- Set and Serve:
- Let the truffles set at room temperature or refrigerate for 10–15 minutes until the chocolate hardens.
- Store in an airtight container in the refrigerator for up to 2 weeks.
Tips:
- For a creamier center, use all creamy peanut butter.
- You can swap white chocolate for milk or dark chocolate if preferred.
- These truffles make great gifts — package them in decorative boxes or tins!
