Ingredients

500 g beef stew meat, cut into bite-sized pieces

1 tablespoon olive oil

1 onion, finely chopped

2 garlic cloves, minced

2 carrots, diced

2 potatoes, peeled and diced

1 cup small pasta (fusilli, macaroni, or shells)

1/2 cup cooked or canned beans (optional)

1 tablespoon tomato paste

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt, or to taste

1/2 teaspoon dried oregano or thyme

6 cups beef broth or water

2 tablespoons fresh parsley, chopped

 

 

 

 

Instructions

1. Brown the Beef

Heat the olive oil in a large soup pot over medium heat. Add the beef pieces and cook for 6–8 minutes until nicely browned on all sides. This step adds incredible depth and richness to the soup.

2. Sauté the Aromatics

Add the chopped onion and cook for about 3–4 minutes until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.

3. Build the Flavor

Mix in the tomato paste, paprika, black pepper, salt, and dried herbs. Stir everything well so the beef and onions are evenly coated with the seasonings.

4. Add the Vegetables & Broth

Add the diced carrots and potatoes to the pot. Pour in the beef broth and stir gently. Bring the soup to a light boil.

5. Simmer Until Tender

Reduce the heat to low, cover the pot, and let the soup simmer for 30–40 minutes until the beef becomes tender and flavorful.

6. Cook the Pasta

Add the pasta and beans, if using. Continue simmering for 10–12 minutes until the pasta is perfectly tender and the soup becomes beautifully hearty.

7. Finish & Serve
