Ingredients
2 lbs chicken pieces (drumsticks, thighs, wings, or breasts)
2 cups buttermilk
2 cups all-purpose flour
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper (optional for extra heat)
1 teaspoon dried oregano
1 teaspoon dried thyme
Vegetable oil, for frying
Instructions
1. Marinate the Chicken
Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover and refrigerate for at least 4 hours, preferably overnight. This helps tenderize the chicken and keeps it juicy inside.
2. Prepare the Seasoned Flour
In a large shallow bowl, combine the flour, paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, oregano, and thyme. Mix well until evenly combined.
3. Coat the Chicken
Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each piece thoroughly in the seasoned flour mixture, pressing the coating onto the chicken for an extra crispy texture.
For an even crunchier crust, dip the chicken back into the buttermilk and coat it in the flour mixture a second time.
4. Fry Until Golden
Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Carefully fry the chicken in batches for 12–15 minutes, turning occasionally, until golden brown, crispy, and fully cooked inside.
Transfer to a wire rack or paper towels to drain excess oil.
