Ingredients
120 g oat flakes (about 3/4 cup + 1 tbsp)
200 ml hot milk (about 5/6 cup)
2 eggs
2 ripe bananas
1 tsp vanilla extract or vanillin
40 g unsweetened cocoa powder
1 tsp baking powder
A handful of chopped walnuts
Chocolate chips for topping
Instructions
Prepare the oats
Place the oat flakes in a bowl and pour in the hot milk. Let them soak for about 5 minutes until soft.
Mash the bananas
In another bowl, mash the bananas until smooth and creamy.
Mix the batter
Add the eggs and vanilla to the bananas and whisk well. Stir in the soaked oats, cocoa powder, and baking powder. Mix until fully combined.
Add the toppings
Fold in the chopped walnuts and a few chocolate chips for extra flavor and texture.
Bake
Pour the batter into a greased or parchment-lined baking dish. Sprinkle more chocolate chips and walnuts on top if desired.
Cooking time
Bake in a preheated oven at 180°C (350°F) for about 30–35 minutes, or until the center is set and a toothpick comes out mostly clean.
