Creamy No-Bake Cottage Cheese Cake
Light, silky, and incredibly easy to make — this no-bake cottage cheese cake is the perfect chilled dessert for warm days or whenever you want something sweet without turning on the oven. With its smooth texture and delicate flavor, every bite feels rich yet refreshing!
Ingredients
40 g gelatin
200 ml water (for dissolving the gelatin)
600 g smooth cottage cheese
200 ml heavy cream
120 g sugar
1 tsp vanilla extract
Fresh berries or fruit for topping (optional)
Crushed biscuits or graham crackers for the base (optional)
Instructions
Prepare the Gelatin
In a small bowl, mix the gelatin with the water and let it bloom for 5–10 minutes. Gently heat until fully dissolved, then set aside to cool slightly.
Make the Creamy Filling
In a large bowl, blend the cottage cheese, sugar, and vanilla extract until completely smooth and creamy.
Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Fold it gently into the cottage cheese mixture.
Combine Everything
Slowly pour the dissolved gelatin into the mixture while stirring continuously until fully incorporated.
Assemble the Cake
If using a crust, press crushed biscuits into the bottom of a springform pan. Pour the creamy filling over the crust and smooth the top.
Chill
Refrigerate for at least 4–6 hours, or until fully set.
Serve & Enjoy
Top with fresh berries, fruit sauce, or a light dusting of cocoa powder before serving.
Tips
For extra flavor, add lemon zest or a splash of honey.
Chill overnight for the best texture.
