Crispy Garlic Butter Parmesan Baby Potatoes

Ingredients

2 lbs (900g) baby potatoes, washed and halved

4 tbsp butter, melted

4 cloves garlic, minced

2 tbsp olive oil

1 tsp Italian seasoning

1 tsp paprika

½ tsp salt

½ tsp black pepper

½ cup grated Parmesan cheese

2 tbsp fresh parsley, chopped

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, combine the melted butter, garlic, olive oil, Italian seasoning, paprika, salt, and black pepper.

Add the baby potatoes and toss until evenly coated with the garlic butter mixture.

 

 

 

 

Arrange the potatoes cut-side down on the prepared baking sheet in a single layer.

Roast for 30–35 minutes, or until the potatoes are golden brown and crispy on the outside while tender inside.

Remove from the oven and immediately sprinkle with Parmesan cheese.

Return to the oven for 2–3 minutes until the cheese melts slightly.

Garnish with fresh parsley and serve hot.
