Crispy Golden Potato Pancakes
These crispy potato pancakes are quick, comforting, and incredibly delicious — perfect for a simple dinner or an easy snack. Golden on the outside and soft on the inside, they pair wonderfully with sour cream, yogurt, or your favorite dipping sauce.
Ingredients
3 medium potatoes, grated
1 egg
2 tbsp flour
Salt, to taste
Black pepper, to taste
2 tbsp vegetable oil for frying
Optional: chopped parsley, garlic powder, or grated cheese for extra flavor
Instructions
Grate the potatoes and squeeze out as much excess water as possible using a clean kitchen towel or cheesecloth.
Place the potatoes in a large bowl and add the egg, flour, salt, and black pepper. Mix well until fully combined.
Heat the vegetable oil in a skillet over medium heat.
Scoop small portions of the potato mixture into the pan and flatten slightly with a spoon to form pancakes.
Fry for 3–4 minutes on each side, or until golden brown and crispy.
Transfer to a paper towel-lined plate to remove excess oil.
Serve warm with sour cream, yogurt sauce, ketchup, or a fresh salad.

For even more flavor, add finely chopped onions, shredded cheese, or fresh herbs to the mixture before frying.
