Cyril Lignac’s Ultimate Creamy Gratin Dauphinois

A timeless French comfort food made with tender slices of potato, rich cream, and a beautifully golden top. This classic Gratin Dauphinois is simple, elegant, and incredibly satisfying—perfect as a side dish or the star of a cozy family meal.

 

 

Ingredients

2 lbs (900 g) Yukon Gold or russet potatoes, peeled

2 cups (500 ml) heavy cream

1 cup (250 ml) whole milk

2 cloves garlic, halved

2 tbsp unsalted butter

1 tsp salt

½ tsp freshly ground black pepper

¼ tsp ground nutmeg (optional)

1 cup (100 g) grated Gruyère cheese (optional for a richer topping)

 

 

 

Instructions

1️⃣ Prepare the Potatoes

Preheat your oven to 350°F (180°C).

Peel the potatoes and slice them very thinly (about ⅛ inch / 3 mm thick). Do not rinse them, as the starch helps create the creamy texture.

2️⃣ Infuse the Cream

Rub the inside of a baking dish with the cut garlic cloves, then butter the dish generously.

In a saucepan, combine the cream, milk, salt, pepper, and nutmeg. Heat gently until warm but not boiling.

3️⃣ Assemble the Gratin

Arrange the potato slices in overlapping layers in the prepared baking dish.

Pour the warm cream mixture evenly over the potatoes. If using Gruyère cheese, sprinkle it over the top for an extra golden crust.

4️⃣ Bake to Perfection

Bake for 60–75 minutes, or until the potatoes are completely tender and the top is beautifully golden brown.

If the surface browns too quickly, loosely cover with foil during the last part of baking.

5️⃣ Rest and Serve

Allow the gratin to rest for 10–15 minutes before serving. This helps the creamy sauce set and makes slicing easier.
