Ingredients
For the Caramel
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
1 cup granulated sugar
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
For the Pecan Base
2 cups pecan halves, lightly toasted
For the Chocolate Topping
2 cups semi-sweet chocolate chips
1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
1. Prepare the Pecans
Line a baking sheet or large tray with parchment paper. Arrange the toasted pecan halves in small clusters of 3–4 pecans, creating a turtle-like shape. Set aside.
2. Make the Caramel
In a large heavy-bottomed saucepan, combine the butter, brown sugar, granulated sugar, and sweetened condensed milk. Cook over medium heat, stirring constantly until the mixture comes to a gentle boil.
Continue cooking for 8–10 minutes, stirring continuously, until the caramel thickens and reaches a rich golden color. Remove from heat and stir in the vanilla extract.
3. Assemble the Turtles
Using a spoon, carefully place a generous dollop of warm caramel over each pecan cluster. Allow the caramel to cool and set for about 20–30 minutes.
4. Melt the Chocolate
Place the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring between each interval, until smooth and fully melted.
5. Add the Chocolate Layer
Spoon the melted chocolate over each caramel cluster, covering the top while allowing some pecans to remain visible around the edges.
6. Chill and Set
Refrigerate for 30–45 minutes, or until the chocolate is firm and the candies are completely set.
