Ingredients
4 cups all-purpose flour
1½ cups warm water
1 cup plain yogurt
1 tablespoon instant yeast
1 tablespoon sugar
1½ teaspoons salt
2 tablespoons olive oil
Instructions
1. Activate the Yeast
In a large bowl, combine the warm water, sugar, and yeast. Let it sit for about 5–10 minutes until foamy.
2. Make the Dough
Add the yogurt, olive oil, and salt. Gradually mix in the flour until a soft dough forms.
3. Knead
Transfer the dough to a lightly floured surface and knead for 8–10 minutes until smooth and elastic. If the dough feels sticky, add a little extra flour as needed.
4. First Rise
Place the dough in a lightly greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
5. Shape the Bread
Punch down the dough and divide it into 6 equal portions. Roll each piece into a round flatbread about ½ inch thick.
6. Second Rise
Cover the rounds and let them rest for 15–20 minutes until slightly puffy.
7. Cook on the Skillet
Heat a dry skillet or griddle over medium heat. Cook each bread for 2–3 minutes per side until golden brown with beautiful puffed spots.
8. Serve Warm
Brush with melted butter if desired and serve warm.
