1 1/2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 tablespoon butter (optional, for warming tortillas)
Optional Toppings
Shredded lettuce
Diced tomatoes
Sliced avocado or guacamole
Sour cream
Fresh cilantro, chopped
Sliced jalapeños
Lime wedges
Salsa or hot sauce
Instructions
Cook the Aromatics Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
Brown the Beef Add the ground beef to the skillet. Cook, breaking it apart with a spoon, until fully browned and no longer pink, about 5–6 minutes. Drain any excess grease if needed.
Season the Filling Sprinkle in the taco seasoning, smoked paprika, and cumin. Stir well to coat the beef evenly.
Add the Rotel Pour in the Rotel tomatoes (with their juices), tomato sauce, and beef broth. Stir to combine. Simmer for 5–7 minutes, until the mixture thickens slightly. Season with salt and pepper to taste.
Warm the Tortillas Heat the tortillas in a dry skillet for about 20 seconds per side, or brush lightly with butter for extra flavor.
Assemble the Tacos Spoon the beef mixture into each warm tortilla. Top generously with shredded cheddar and Monterey Jack cheese.
Melt the Cheese Fold the tacos gently and return them to the skillet for 1–2 minutes per side, just until the cheese melts and the tortillas are lightly golden.
Serve Garnish with your favorite toppings such as lettuce, tomatoes, avocado, sour cream, cilantro, and a squeeze of fresh lime juice.
