Golden Blueberry Crumb Cheesecake (Quick & Creamy Delight)
A fast, no-fuss cheesecake layered with buttery biscuit crust, silky cream cheese filling, and a sweet blueberry crumble topping. Perfect when you want something impressive without spending hours in the kitchen.
Ingredients
For the crust:
2 cups crushed biscuits (or graham crackers)
½ cup melted butter
For the cheesecake filling:
2 cups cream cheese (softened)
¾ cup sugar
1 tsp vanilla extract
2 large eggs
For the blueberry layer:
1½ cups blueberries (fresh or frozen)
2 tbsp sugar
1 tsp lemon juice
For the crumb topping:
½ cup flour
¼ cup brown sugar
3 tbsp cold butter
Instructions
1. Prepare the crust
Mix crushed biscuits with melted butter until it looks like wet sand. Press firmly into a baking pan to form an even base. Chill while preparing the filling.
2. Make the cheesecake layer
Beat cream cheese, sugar, and vanilla until smooth and creamy. Add eggs one at a time and mix until just combined (don’t overmix). Pour over the crust.
3. Add the blueberry layer
Mix blueberries with sugar and lemon juice, then spoon gently over the cheesecake mixture.
4. Prepare the crumb topping
Rub flour, brown sugar, and cold butter together using your fingers until crumbly. Sprinkle evenly on top.
5. Bake
Bake at 160°C (320°F) for about 35–45 minutes, or until the center is just set.
6. Cool & serve
Let it cool completely, then chill for at least 2 hours before slicing for the best texture.
