Golden Country Pork Casserole with Creamy Potato Topping
Warm, hearty, and packed with comforting flavors, this layered pork and vegetable casserole is topped with smooth mashed potatoes and baked until perfectly golden. A satisfying homemade dinner the whole family will love.
Ingredients
Meat Layer
1–1.2 kg pork shoulder or pork loin, cut into small cubes
Salt, to taste
Black pepper, to taste
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon dried thyme
1 onion, finely chopped
3 garlic cloves, minced
Vegetable Layer
2 carrots, sliced
1 bell pepper, chopped
1 zucchini, diced
200 g mushrooms, sliced
2 tomatoes, chopped
2 tablespoons tomato sauce or tomato paste
Fresh parsley, chopped
Mashed Potato Topping
5 large potatoes, peeled and cubed
3 tablespoons butter
1/2 cup warm milk
Salt and pepper, to taste
1 cup shredded cheese (cheddar or mozzarella)
Instructions
Cook the potatoes
Place the potatoes in a pot of salted water and boil until tender. Drain and mash with butter and warm milk until creamy. Season with salt and pepper.
Brown the pork
Heat olive oil in a large skillet over medium heat. Season the pork with salt, pepper, paprika, and thyme. Cook until nicely browned on all sides.
Prepare the vegetables
Add the onion and garlic to the pan and sauté until fragrant. Stir in the carrots, bell pepper, zucchini, and mushrooms. Cook for 5–7 minutes until softened.
Add the tomatoes
Mix in the chopped tomatoes and tomato paste. Simmer for another few minutes until the sauce becomes rich and flavorful. Finish with fresh parsley.
Assemble the casserole
Spread the pork and vegetable mixture into a greased baking dish. Carefully layer the creamy mashed potatoes over the top and smooth evenly.
Add cheese and bake
Sprinkle shredded cheese generously over the potatoes. Bake at 190°C (375°F) for 25 minutes, or until golden and bubbling.
Serve and enjoy
Let the casserole cool slightly before serving. Pair it with a fresh salad or roasted vegetables for a complete meal.
