Golden Garden Puff Pastry Bake

Crispy, flaky puff pastry wrapped around a rich and savory filling of colorful vegetables, melted cheese, and aromatic herbs. This comforting bake is perfect for brunch, light dinners, parties, or whenever you want something warm, cheesy, and satisfying straight from the oven.

 

 

 

Ingredients

1 sheet puff pastry, thawed

1 zucchini, diced

1 red bell pepper, chopped

1 small onion, finely sliced

1 cup mushrooms, sliced

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 cup cream cheese or ricotta

1 tbsp olive oil

1 tsp Italian seasoning

1/2 tsp paprika

Salt and black pepper to taste

1 egg, beaten (for egg wash)

Fresh parsley or basil for garnish

 

 

 

 

Instructions

Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

Heat olive oil in a skillet over medium heat. Sauté the onion and garlic for 2 minutes until fragrant.

Add the zucchini, bell pepper, and mushrooms. Cook for 5–7 minutes until the vegetables soften and most of the moisture evaporates.

Stir in Italian seasoning, paprika, salt, and black pepper. Remove from heat and let the mixture cool slightly.

Mix the cooked vegetables with cream cheese and half of the mozzarella cheese.

Roll out the puff pastry sheet onto the prepared baking tray. Spoon the vegetable filling into the center, leaving a border around the edges.

Sprinkle the remaining mozzarella cheese on top. Fold the pastry edges inward slightly for a rustic look.

Brush the pastry edges with beaten egg for a beautiful golden finish.

Bake for 25–30 minutes, or until the pastry is puffed and deeply golden brown.

 

 

 

 

Garnish with fresh parsley or basil before serving.
