Heavenly Blueberry Cheesecake Delight

Ingredients

For the Crust

2 cups graham cracker crumbs

1/2 cup melted butter

2 tbsp sugar

For the Cheesecake Filling

3 packages cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1/2 cup sour cream

2 tbsp all-purpose flour

For the Blueberry Topping

2 cups fresh or frozen blueberries

1/3 cup sugar

1 tbsp lemon juice

1 tbsp cornstarch mixed with 2 tbsp water

 

 

 

 

Instructions

Prepare the Crust

Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of a springform pan. Bake for 10 minutes, then let cool.

Make the Cheesecake Filling

In a large bowl, beat the cream cheese until smooth and creamy. Add sugar and vanilla extract, mixing well. Beat in the eggs one at a time. Stir in sour cream and flour until fully combined and silky.

Bake the Cheesecake

Pour the filling over the cooled crust and smooth the top. Bake for 50–60 minutes or until the center is slightly set but still a little jiggly. Turn off the oven and leave the cheesecake inside for 1 hour with the door slightly open.

Prepare the Blueberry Topping

In a saucepan over medium heat, combine blueberries, sugar, and lemon juice. Stir gently until the berries release their juices. Add the cornstarch mixture and cook until thickened and glossy. Let cool completely.

 

 

 

Chill & Serve

Spread the blueberry topping over the chilled cheesecake. Refrigerate for at least 4 hours or overnight for best results. Slice and enjoy every creamy, fruity bite!
