2 medium zucchinis, grated

1 small onion, finely chopped

½ cup all-purpose flour (or whole wheat flour)

5 large eggs

¼ cup milk

2 tablespoons olive oil

Salt and black pepper, to taste

½ teaspoon dried oregano or mixed herbs

Instructions

 

1. Prepare the zucchini

Grate the zucchini, then squeeze out as much moisture as possible using a clean kitchen towel or your hands. This step ensures your slice won’t turn soggy.

 

2. Combine the vegetables

In a large mixing bowl, add the zucchini, onion, carrot, corn, and herbs. Toss everything together until evenly mixed.

 

3. Add the wet ingredients

Crack in the eggs, then pour in the milk and olive oil. Mix well until fully combined.

 

4. Incorporate the dry ingredients

Add the flour, baking powder, salt, pepper, and shredded cheese. Stir until you get a thick, well-blended batter.
