This savory zucchini slice is soft, cheesy, and packed with colorful vegetables. It’s the perfect fuss-free dish for breakfast, lunchboxes, or a light dinner—delicious whether served warm or chilled!
Ingredients
2 medium zucchinis, grated
1 small onion, finely chopped
½ cup grated carrot (optional but highly recommended for sweetness and color)
½ cup corn kernels (fresh, frozen, or canned)
1 cup shredded cheese (cheddar, mozzarella, or a blend)
½ cup all-purpose flour (or whole wheat flour)
5 large eggs
¼ cup milk
2 tablespoons olive oil
1 teaspoon baking powder
Salt and black pepper, to taste
½ teaspoon dried oregano or mixed herbs
Optional: chopped fresh parsley or green onions
Instructions
1. Prepare the zucchini
Grate the zucchini, then squeeze out as much moisture as possible using a clean kitchen towel or your hands. This step ensures your slice won’t turn soggy.
2. Combine the vegetables
In a large mixing bowl, add the zucchini, onion, carrot, corn, and herbs. Toss everything together until evenly mixed.
3. Add the wet ingredients
Crack in the eggs, then pour in the milk and olive oil. Mix well until fully combined.
4. Incorporate the dry ingredients
Add the flour, baking powder, salt, pepper, and shredded cheese. Stir until you get a thick, well-blended batter.
5. Bake to perfection
Preheat your oven to 180°C (350°F).
Grease or line a baking dish with parchment paper.
Pour in the mixture, spread evenly, and smooth the top.
Bake for 30–40 minutes, or until golden on top and firm in the center.
6. Cool and slice
Allow the slice to cool slightly before cutting into squares or bars.
