Instructions

Step 1: Prepare the Cake

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

In a large bowl, combine the cake mix, crushed pineapple with juice, eggs, oil, sour cream, and shredded coconut. Mix until smooth and well combined.

Pour the batter into the prepared baking dish and spread evenly.

Step 2: Bake

Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool completely before adding the topping.

Step 3: Make the Creamy Frosting

In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, then continue mixing until creamy.

Fold in the whipped topping and drained pineapple until light and fluffy.

Step 4: Assemble the Cake

Spread the frosting evenly over the cooled cake. Sprinkle generously with toasted coconut flakes.

Chill the cake for at least 1 hour before serving for the best flavor and texture.

Serving Suggestions

Serve cold with fresh pineapple slices, a drizzle of caramel sauce, or a scoop of vanilla ice cream for an extra tropical touch.
