Easy Vegetable Beef Soup

This soup is packed with tender beef, colorful vegetables, and a deeply savory broth. Simple ingredients, huge flavor.

 

 

 

Ingredients

Main Ingredients:

1 lb (450 g) beef stew meat, cut into bite-size pieces

2 tablespoons vegetable oil or olive oil

1 medium onion, chopped

2 cloves garlic, minced

4 cups beef broth (low-sodium preferred)

1 can (14.5 oz / 410 g) diced tomatoes (with juice)

2 cups mixed vegetables

(carrots, peas, corn, green beans — fresh or frozen)

Optional but HIGHLY Recommended Add-Ins:

1 cup potatoes, diced

1 cup celery, sliced

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 teaspoon paprika

½ teaspoon dried thyme or Italian seasoning

1 bay leaf

1 tablespoon tomato paste (for deeper flavor)

 

 

 

Instructions

1️⃣ Brown the Beef (Flavor Starts Here!)

Heat oil in a large pot or Dutch oven over medium-high heat.

Add beef stew meat in a single layer.

Season lightly with salt and pepper.

Sear until browned on all sides (about 5–7 minutes).

Remove beef and set aside.

Don’t skip this step — browning = rich flavor.

2️⃣ Build the Flavor Base

In the same pot, add chopped onion.

Cook for 3–4 minutes until softened.

Add garlic and cook 30 seconds until fragrant.

Stir in tomato paste, paprika, and thyme.

3️⃣ Add Liquids & Simmer

Return beef to the pot.

Pour in beef broth and diced tomatoes (with juices).

Add bay leaf.

Bring to a gentle boil, then reduce heat to low.

Cover and simmer for 35–45 minutes, until beef begins to soften.

4️⃣ Add Vegetables

Add mixed vegetables and potatoes (if using).

Stir well.

Cover and simmer another 20–25 minutes, until vegetables are tender and beef is fork-tender.

5️⃣ Final Taste & Adjust

Remove bay leaf

Taste and adjust salt and pepper

Add a splash of water or broth if soup is too thick

 

 

 

Serve & Enjoy

Serve hot with:

Crusty bread

Cornbread

Crackers

Optional garnish:

Fresh parsley

Grated Parmesan
