This recipe is perfect if you want to experiment with aging flavors quickly using charred oak chips in a jar instead of a traditional barrel. You can adjust char level and add extra flavors like cherry wood, vanilla, or honey to create your own unique spirit.
Ingredients:
- 1 liter high-proof neutral spirit (vodka, Everclear, or unflavored moonshine)
- Oak chips (amount depends on desired intensity; start with 2–4 tablespoons)
- Optional:
- 1–2 charred cherry wood chips
- ½ vanilla bean, split lengthwise
- 1–2 teaspoons honey (optional, for a touch of sweetness)
Instructions:
- Prepare Oak Chips:
- Preheat your oven to 250°F (120°C).
- Spread oak chips on a baking sheet.
- Char in the oven:
- Medium char: 2 hours
- Heavy char: 3 hours
- Let cool before adding to your jar.
- Combine Ingredients:
- Place the charred oak chips in a clean glass jar.
- Add the optional flavorings (cherry wood, vanilla bean, honey).
- Pour the high-proof spirit over the chips and flavorings. Make sure all solids are submerged.
- Seal and Store:
- Seal the jar tightly.
- Store in a cool, dark place. Shake gently once a day for the first few days to mix flavors.
- Taste Test and Adjust:
- After 2–3 days, begin tasting your spirit. The oak will infuse quickly because of the small chips and char.
- Adjust flavor intensity:
- Add more oak chips for stronger wood flavor.
- Remove chips if the flavor is strong enough.
- Honey or vanilla can be adjusted to taste.
- Final Steps:
- Once satisfied with flavor (usually 5–10 days for small charred chips, longer for heavier char), strain the liquid through a fine mesh or coffee filter into a clean jar or bottle.
- Seal and store. Your homemade oak-infused spirit is ready to sip, mix in cocktails, or use in recipes.
Tips:
