Homemade Roasted Tomato Soup & Grilled Cheese

This cozy combo is rich, creamy, and full of roasted flavor. Roasting the vegetables first makes all the difference — it brings out natural sweetness and depth.

Creamy Roasted Tomato Soup

 

 

 

🛒 Ingredients (Serves 4)

5–6 ripe tomatoes, halved

1 purple (red) onion, roughly chopped

1 whole head of garlic (or 2 small), top sliced off

3 tbsp olive oil

Salt & black pepper to taste

½ tbsp dried oregano or Italian seasoning

½ cup vegetable stock (more if needed)

½ cup heavy whipping cream (adjust to taste)

Optional:

Fresh basil

Red pepper flakes (for heat)

1 tsp sugar (if tomatoes aren’t sweet)

 

 

 

 

Instructions

1️⃣ Roast the Vegetables

Preheat oven to 390°F (200°C).

Place tomatoes, onion, and garlic head(s) on a baking tray.

Drizzle generously with olive oil.

Season with salt and pepper.

Roast for 30 minutes until soft, slightly caramelized, and fragrant.

Tip: Garlic should be soft and golden inside — you’ll squeeze it out later.

2️⃣ Blend the Base

Squeeze roasted garlic cloves out of their skins.

Add tomatoes, onion, and garlic to a blender.

Add oregano/Italian seasoning.

Pour in ½ cup vegetable stock.

Blend until completely smooth.

If it’s too thick, add a little more stock.

3️⃣ Add the Cream

Pour in about ½ cup heavy whipping cream (or adjust to your preference).

Blend again until silky and creamy.

Taste and adjust:

More salt?

More pepper?

A pinch of sugar?

A little extra cream?

4️⃣ Warm & Serve

Pour into a pot and gently heat for 5 minutes if needed.

Serve hot with fresh basil, cracked black pepper, or a drizzle of olive oil.

 

 

 

Perfect Grilled Cheese

Ingredients

8 slices bread (sourdough or sandwich bread)

4–8 slices cheese (cheddar, mozzarella, gouda, or a mix)

2–3 tbsp butter (softened)

Instructions

1️⃣ Butter one side of each bread slice.

2️⃣ Place cheese between unbuttered sides.

3️⃣ Cook in skillet over medium-low heat.

4️⃣ Toast slowly until golden brown (3–4 minutes per side).

5️⃣ Press gently with spatula for even melting.

Low and slow = crispy outside, perfectly melted inside.

 

 

 

 

Serving Tip

Cut grilled cheese into strips for dipping into the soup.
