Ingredients
2 lbs baby potatoes, washed and cut into halves
1 cup shredded cheddar cheese
6 slices crispy beef bacon or turkey bacon, chopped
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons ranch seasoning
2 green onions, sliced
Salt and black pepper, to taste
Fresh parsley for garnish
Instructions
Boil the potatoes in salted water until fork-tender, about 12–15 minutes. Drain and let cool slightly.
In a large bowl, whisk together the sour cream, mayonnaise, and ranch seasoning until smooth and creamy.
Add the warm potatoes and gently toss to coat.
Stir in the cheddar cheese, crispy bacon, and green onions.
Season with salt and black pepper to taste.
Chill for at least 30 minutes before serving for the best flavor.
Garnish with fresh parsley and extra cheese before serving.
