Loaded Carne Asada Quesadillas with Smoky Chipotle Mayo

These crispy, cheesy carne asada quesadillas are packed with juicy seasoned beef, sweet onions, spicy jalapeños, and plenty of melted cheese tucked inside golden toasted tortillas. Finished with a creamy smoky chipotle mayo, they’re perfect for game nights, family dinners, or whenever you’re craving bold Mexican-inspired comfort food.

 

 

 

Ingredients

2.5 lbs beef chuck roast, chopped into small pieces

1 medium sweet onion, diced

2 jalapeño peppers, diced

8 large flour tortillas

2 cups shredded Monterey Jack cheese

2 cups shredded cheddar cheese

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro for garnish

Lime wedges for serving

Smoky Chipotle Mayo

1/2 cup mayonnaise

1–2 chipotle peppers in adobo sauce, finely chopped

1 teaspoon lime juice

1/2 teaspoon garlic powder

 

 

 

 

Instructions

Cook the Beef

Heat olive oil in a large skillet over medium-high heat. Add the chopped beef and cook until browned and tender, about 10–12 minutes.

Add the Flavor

Stir in the diced onion and jalapeños. Cook for 4–5 minutes until softened and fragrant. Season with chili powder, smoked paprika, cumin, garlic powder, salt, and black pepper.

Make the Chipotle Mayo

In a small bowl, combine mayonnaise, chopped chipotle peppers, lime juice, and garlic powder. Mix until smooth and creamy.

Assemble the Quesadillas

Lay tortillas flat and sprinkle cheese over one half of each tortilla. Add the beef mixture, then top with more cheese. Fold tortillas in half.

Cook Until Crispy

Heat a clean skillet or griddle over medium heat. Cook each quesadilla for 2–3 minutes per side until golden brown and crispy with melted cheese inside.

Serve & Enjoy

Slice into wedges and drizzle with smoky chipotle mayo. Garnish with fresh cilantro and serve with lime wedges, salsa, or guacamole.
