These Loaded Cheesy Pocket Tacos are everything you want in a taco—crispy on the outside, wonderfully cheesy on the inside, and loaded with seasoned beef and delicious toppings. They’re easy to make, incredibly satisfying, and perfect for a family dinner, game-day snack, or quick weekend treat!
Ingredients
For the Taco Filling
– 1 lb (450 g) ground beef
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 1 packet taco seasoning, or 2 tbsp homemade taco seasoning
– ½ cup salsa
– 1 cup shredded cheddar cheese
– ½ cup shredded Monterey Jack or mozzarella cheese
– Salt and black pepper, to taste
For the Pockets
– 8 small flour tortillas
– 1 cup shredded cheddar cheese
– ½ cup shredded Monterey Jack or mozzarella cheese
– 2 tbsp melted butter or olive oil
Optional Toppings
– Diced tomatoes
– Shredded lettuce
– Sliced jalapeños
– Diced avocado
– Sour cream
– Salsa
– Fresh cilantro
– Green onions
Instructions
1. Prepare the Filling
Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
Add the chopped onion and garlic. Cook for 2–3 minutes, until softened.
Drain any excess grease, then stir in the taco seasoning and salsa. Cook for another 2–3 minutes until the mixture is flavorful and slightly thickened.
Remove from the heat and let it cool for a few minutes.
2. Add the Cheese
Stir the cheddar and Monterey Jack cheese into the warm beef mixture. The cheese should begin to melt, creating a rich and gooey filling.
3. Form the Taco Pockets
Warm the tortillas briefly so they become flexible.
Place a generous spoonful of the beef-and-cheese mixture in the center of each tortilla. Fold the tortilla over the filling and gently press the edges together to create a sealed pocket.
4. Crisp Them Up
Brush both sides of each pocket lightly with melted butter or olive oil.
Skillet method:
Heat a nonstick skillet over medium heat. Cook the pockets for about 2–3 minutes per side, until golden brown and crisp and the cheese is melted.
Air fryer method:
Preheat the air fryer to 375°F (190°C). Place the pockets in a single layer and cook for about 6–8 minutes, flipping halfway through.
5. Load Them Up!
Serve the crispy cheesy pockets hot with your favorite toppings. Add lettuce, tomatoes, jalapeños, avocado, sour cream, salsa, or fresh cilantro.

– Don’t overfill the tortillas, or they may split while cooking.
