Ingredients
For the Pork Chops:
– 4 bone-in pork chops, about 1 inch thick
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon paprika
– ½ teaspoon dried thyme
– 2 tablespoons all-purpose flour
– 2 tablespoons vegetable oil
For the Gravy:
– 2 tablespoons butter
– 1 large yellow onion, thinly sliced
– 2 cloves garlic, minced
– 2 tablespoons all-purpose flour
– 2 cups chicken broth
– ½ cup heavy cream
– 1 teaspoon Worcestershire sauce
– ½ teaspoon dried thyme
– Salt and black pepper, to taste
– ½ teaspoon paprika
– 1 tablespoon fresh chopped parsley, for garnish
Instructions
1. Season the pork:
Pat the pork chops dry with paper towels. Season both sides with salt, black pepper, garlic powder, onion powder, paprika, and thyme. Lightly coat each chop with flour.
2. Sear the chops:
Heat the oil in a large skillet over medium-high heat. Add the pork chops and sear for about 3–4 minutes per side, until nicely browned. Transfer them to a plate.
3. Cook the onions:
Reduce the heat to medium and add the butter. Stir in the sliced onions and cook for 5–7 minutes until softened and lightly golden. Add the garlic and cook for another 30 seconds.
4. Make the gravy:
Sprinkle the flour over the onions and stir well. Cook for about 1 minute. Slowly whisk in the chicken broth, scraping up the flavorful browned bits from the bottom of the skillet.
5. Make it creamy:
Stir in the heavy cream, Worcestershire sauce, thyme, and paprika. Season with salt and pepper to taste. Simmer for 2–3 minutes until the gravy begins to thicken.
6. Smother the pork chops:
Return the pork chops and any accumulated juices to the skillet. Spoon the gravy and onions over the top. Cover and simmer gently for 15–20 minutes, or until the pork is tender and cooked through.
7. Serve:
Garnish with fresh parsley and serve hot with creamy mashed potatoes, rice, biscuits, or your favorite Southern-style vegetables.
