Ingredients
1 lb (450 g) chicken livers, trimmed
1½ cups buttermilk
1½ cups all-purpose flour
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
½ tsp cayenne pepper (optional)
1 tsp salt
½ tsp black pepper
Vegetable oil, for frying

Instructions
Rinse and trim the chicken livers, then soak them in buttermilk for at least 1 hour (or overnight for the best flavor).
In a large bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper.
Heat 2–3 inches of vegetable oil in a deep skillet or Dutch oven to 350°F (175°C).
Remove the livers from the buttermilk, letting the excess drip off, then coat each piece thoroughly in the seasoned flour.
Fry in small batches for 4–6 minutes, turning occasionally, until golden brown and cooked through.
Transfer to a paper towel-lined plate to drain any excess oil.
Serve immediately with your favorite dipping sauce, lemon wedges, and classic Southern sides like mashed potatoes, coleslaw, or biscuits.
