This juicy, flavorful meatloaf hides a delicious surprise inside—melted cheese (or eggs), making every slice exciting and irresistible. It’s perfect for family dinners and easy to prepare.
Ingredients (Serves 4–6)
Meat mixture
800 g ground beef (or mix of beef and veal)
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
80 g breadcrumbs (about ¾ cup)
100 ml milk (about ½ cup)
2 tablespoons ketchup
1 tablespoon mustard
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 tablespoon chopped parsley (optional)
Surprise filling (choose one or combine)
150 g mozzarella cheese, cut into strips or cubes
or
3 boiled eggs, peeled
or
Cheddar cheese cubes
Glaze
3 tablespoons ketchup
1 tablespoon mustard
1 tablespoon brown sugar (optional)
Instructions
Step 1: Prepare the mixture
Preheat oven to 180°C (350°F).
In a small bowl, mix breadcrumbs and milk. Let soak for 2 minutes.
In a large bowl, combine ground meat, onion, garlic, egg, soaked breadcrumbs, ketchup, mustard, salt, pepper, paprika, and parsley.
Mix until well combined (do not overmix).
Step 2: Shape and add the surprise
Place the meat mixture on baking paper.
Flatten into a rectangle shape.
Place cheese or boiled eggs in the center.
Carefully roll and seal the meat around the filling.
Shape into a loaf.
Step 3: Add glaze
Place meatloaf in a baking dish.
Mix ketchup, mustard, and brown sugar.
Spread evenly over the top.
Step 4: Bake
Bake for 50–60 minutes until fully cooked.
Internal temperature should reach 70°C (160°F).
Step 5: Rest and serve
Let rest for 10 minutes before slicing.
This helps keep it juicy and makes slicing easier.
