Mediterranean Chicken Stir-Fry Delight
Ingredients:
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and black pepper, to taste
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 small red onion, thinly sliced
1/2 cup cherry tomatoes, halved
1/4 cup black or green olives, sliced
2 tablespoons lemon juice
2 tablespoons fresh parsley, chopped
Optional: crumbled feta cheese for topping
Instructions:
Heat olive oil in a large skillet over medium-high heat.
Add the chicken pieces and season with garlic powder, onion powder, oregano, paprika, salt, and pepper. Cook for 5–7 minutes until golden and cooked through. Remove from the pan and set aside.
In the same skillet, add a little more olive oil if needed, then toss in the bell peppers, zucchini, and red onion. Stir-fry for about 4–5 minutes until slightly tender but still crisp.
Add the cherry tomatoes and olives, cooking for another 2 minutes.
Return the chicken to the pan and drizzle with lemon juice. Toss everything together and cook for 2–3 more minutes until well combined and heated through.
Remove from heat and sprinkle with fresh parsley and optional feta cheese.
Serving Suggestion:
Serve hot over rice, couscous, or with warm pita bread for a complete Mediterranean-inspired meal.
