Perfect for beginners, busy days, family gatherings, or anytime you want an impressive dessert with minimal effort.

Ingredients

For the Cake Layers

2 boxes instant vanilla pudding mix

3 cups cold milk

1 container whipped topping (about 8 oz), thawed

1 box graham crackers

For the Chocolate Topping

1/3 cup cocoa powder

1 cup sugar

1/4 cup milk

1/2 cup butter

1 teaspoon vanilla extract

Instructions

Prepare the Cream Filling

In a large bowl, whisk together the pudding mix and cold milk until smooth and thickened. Fold in the whipped topping gently until creamy and fluffy.

Create the Layers

In a 9×13-inch baking dish, place a single layer of graham crackers on the bottom. Spread half of the pudding mixture over the crackers. Add another layer of graham crackers, then spread the remaining pudding mixture on top. Finish with one final layer of graham crackers.

Make the Chocolate Glaze

In a saucepan over medium heat, combine cocoa powder, sugar, milk, and butter. Stir until the mixture becomes smooth and begins to simmer. Remove from heat and stir in vanilla extract. Let it cool slightly.

Top the Cake

Pour the chocolate glaze evenly over the top layer of graham crackers, spreading gently to cover completely.

Chill & Serve

Refrigerate for at least 6 hours, preferably overnight. This allows the graham crackers to soften into tender cake-like layers.

Tips for the Best Éclair Cake

Letting it chill overnight gives the best texture and flavor.

You can use chocolate pudding for a richer twist.

Add sliced bananas or strawberries between the layers for extra flavor.

Store leftovers covered in the refrigerator for up to 4 days.

Creamy, chocolatey, and unbelievably easy, this no-bake dessert is the kind of recipe everyone asks for after the first bite!
