One-Point Blueberry Lemon Bliss Pancakes

Ingredients

1 cup fat-free cottage cheese

2 large eggs

½ cup rolled oats

1 teaspoon baking powder

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

½ cup fresh blueberries

½ teaspoon vanilla extract (optional)

Nonstick cooking spray

Instructions

Add the cottage cheese, eggs, rolled oats, baking powder, lemon zest, lemon juice, and vanilla extract (if using) to a blender. Blend until smooth and creamy.

Gently fold the blueberries into the batter, being careful not to crush them.
