Overnight Crème Brûlée–Style French Toast
Ingredients
1 loaf French bread, cut into 1-inch slices
5 large eggs
1 cup half-and-half
1 cup whole milk
1 teaspoon vanilla extract
⅔ cup granulated sugar, plus extra for topping
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ cup unsalted butter
Maple syrup, for serving
Instructions
1. Prepare the Dish
Generously grease a 9×13-inch baking dish with butter. Arrange the French bread slices in a single layer, slightly overlapping if needed.
2. Make the Custard
In a large mixing bowl, whisk together the eggs, half-and-half, milk, vanilla extract, sugar, cinnamon, and nutmeg until smooth and fully combined.
3. Soak the Bread
Pour the custard evenly over the bread, making sure each slice absorbs the mixture. Gently press the bread down to help it soak evenly. Cover tightly and refrigerate overnight.
4. Bake
The next morning, preheat the oven to 350°F (175°C). Remove the dish from the refrigerator and uncover. Scatter small pieces of butter over the top and lightly sprinkle with sugar.
Bake for 35–40 minutes, until puffed, set, and golden brown.
5. Brûlée the Topping
Let the French toast cool for a few minutes. Sprinkle an even layer of sugar over the top and place under the broiler briefly, watching closely, until the sugar melts and caramelizes into a crisp crust.
6. Serve
Serve warm with maple syrup, and if desired, fresh berries or whipped cream.
