Patty Melts with Secret Sauce (Diner-Style Classic)

Warm, buttery, cheesy, and packed with flavor — this homemade patty melt is everything you love about a diner favorite, made right in your kitchen.

 

 

Ingredients

For the Patty Melts:

1 lb ground beef

6 slices rye bread

½ tsp onion powder

½ tsp garlic powder

Salt, to taste

Pepper, to taste

6 slices cheddar cheese

6 slices provolone cheese

6 Tbsp softened unsalted butter

 

 

For the Secret Sauce:

¼ cup mayonnaise

2 Tbsp crumbled bacon

3 Tbsp ketchup

1 tsp sugar

1 tsp relish

 

 

Instructions

1️⃣ Shape the Patties

Divide the ground beef into 3 equal portions.

Gently press each into a thin patty slightly larger than your bread slices (they’ll shrink as they cook).

Season both sides with:

Salt

Pepper

Onion powder

Garlic powder

2️⃣ Cook the Patties

Heat a skillet over medium-high heat.

Cook patties for 3–4 minutes per side until browned and cooked through (internal temp 160°F / 71°C).

Remove from skillet and set aside.

3️⃣ Make the Secret Sauce

In a small bowl, mix:

Mayonnaise

Ketchup

Sugar

Relish

Crumbled bacon

Stir until smooth and well combined.

Set aside.

4️⃣ Butter the Bread

Spread softened butter on one side of each slice of rye bread (this will be the outside for grilling).

5️⃣ Assemble the Patty Melts

On the non-buttered side of 3 bread slices:

Add 1 slice cheddar

Place cooked beef patty

Add 2 slices provolone

Spread a generous layer of secret sauce

Top with remaining bread slice (buttered side facing out)

6️⃣ Grill to Perfection

Heat skillet to medium heat.

Cook sandwiches for 3–4 minutes per side, pressing gently with a spatula, until:

Bread is golden brown

Cheese is fully melted

Lower heat slightly if browning too fast.
