Perfect Pan-Seared New York Strip Steaks with Garlic Butter

Juicy, tender, and packed with rich flavor, these pan-seared New York strip steaks are cooked to perfection with a golden crust and finished with buttery garlic goodness. This restaurant-style steak recipe is simple enough for a weeknight dinner yet impressive enough for special occasions.

Ingredients

2 New York strip steaks (about 12 ounces each, 1¼ inches thick)

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

2 tablespoons unsalted butter

3 garlic cloves, smashed

2 sprigs fresh rosemary or thyme

1 teaspoon garlic powder (optional)

Instructions

Prepare the Steaks

Remove the steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature. Pat them dry with paper towels.

Season Generously

Rub both sides of the steaks with salt, black pepper, and garlic powder if using.

Heat the Pan

Place a heavy skillet or cast-iron pan over medium-high heat. Add the olive oil and heat until shimmering.

Sear the Steaks

Carefully place the steaks in the hot skillet. Cook for about 3–4 minutes without moving them, until a deep golden-brown crust forms.

Flip and Add Flavor

Turn the steaks over and add the butter, smashed garlic, and rosemary or thyme to the pan.

Baste the Steaks

Tilt the pan slightly and spoon the melted butter over the steaks continuously for another 3–4 minutes, or until cooked to your preferred doneness.

Rest Before Serving

Transfer the steaks to a plate and let them rest for 5–10 minutes before slicing. This helps keep the juices inside.

Serving Suggestions

Serve these flavorful steaks with:

Garlic mashed potatoes

Roasted vegetables

Crispy fries

Fresh green salad

Pro Tip

For the best crust, make sure the steaks are completely dry before seasoning and avoid overcrowding the pan.
