ZUCCHINI BOATS WITH SOUL

ZUCCHINI BOATS WITH SOUL

Creamy • Crispy • Comforting • Fresh

A warm, melty dish that feels indulgent but stays light and nourishing. Perfect as a main for a light dinner or a stunning side.

Time & Yield

Prep: 15 minutes

Cook: 25–30 minutes

Serves: 3–4 people

Difficulty: Easy

INGREDIENTS

Base

3 medium zucchinis

2 tbsp olive oil

1 garlic clove, finely minced (or grated)

½ tsp salt

¼ tsp black pepper

Cheesy Layer

½ cup shredded mozzarella (stretchy & mild)

or

Cheddar (sharper & bolder)

or a mix of both

Fresh Finish

1 cup fresh arugula (rocket), loosely packed

Creamy Drizzle

¼ cup plain yogurt or ranch sauce

1 tsp lemon juice (optional but amazing)

Pinch of salt

STEP-BY-STEP METHOD

1️⃣ Prepare the Zucchini Boats

Preheat oven to 200°C / 400°F

Slice zucchinis lengthwise

Using a spoon, gently scoop out a thin strip from the center

Don’t over-scoop—this keeps them sturdy

2️⃣ Garlic Oil Magic

In a small bowl, mix:

Olive oil

Minced garlic

Brush generously over zucchinis

Season with salt & pepper

This step builds deep flavor right into the veggie

3️⃣ Roast to Golden Perfection

Place zucchinis cut-side up on a baking tray

Roast for 18–22 minutes, until:

Edges are lightly golden

Zucchini is tender but not mushy

4️⃣ Cheese Time

Remove tray from oven

Sprinkle cheese evenly into the centers

Return to oven or switch to grill/broiler

Cook 3–5 minutes until:

Cheese is melted

Lightly bubbly or golden

For extra crisp: let it blister just a little

5️⃣ Fresh & Creamy Finish

Toss arugula lightly with a drop of olive oil (optional)

Top hot zucchini boats with arugula

Drizzle yogurt or ranch sauce over the top

Add lemon juice if using

The contrast of hot + cold, creamy + peppery is everything

HOW TO SERVE

Serve warm, straight from the oven

Great with:

Toasted bread

Grilled chicken or fish

Perfect for lunch, dinner, or a classy appetizer platter.
