Heavenly Banana Walnut Cream Cake
Ingredients
For the Banana Cake
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon (optional)
½ cup unsalted butter, softened
¾ cup granulated sugar
¼ cup brown sugar (packed)
2 large eggs (room temperature)
1 teaspoon vanilla extract
1 cup ripe mashed bananas (about 2–3 bananas)
½ cup sour cream or plain yogurt
¾ cup chopped walnuts
For the Cream Filling / Frosting
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream (cold)
Optional Garnish
Chopped walnuts
Banana slices (add just before serving)
Instructions
Step 1: Prepare the Oven
Preheat oven to 350°F (175°C)
Grease and flour a 9×13-inch pan or two 8-inch round cake pans
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together:
Flour
Baking soda
Baking powder
Salt
Cinnamon
Set aside.
Step 3: Cream Butter & Sugar
In a large bowl:
Beat butter, granulated sugar, and brown sugar until light and fluffy (2–3 minutes).
Add eggs one at a time, mixing well after each.
Mix in vanilla extract.
Step 4: Add Bananas & Dairy
Stir in mashed bananas.
Mix in sour cream or yogurt until smooth.
Step 5: Combine Batter
Gradually add dry ingredients to wet ingredients.
Mix just until combined—do not overmix.
Gently fold in chopped walnuts.
Step 6: Bake
Pour batter into prepared pan(s).
Bake:
9×13 pan: 35–40 minutes
Round pans: 25–30 minutes
A toothpick inserted should come out clean.
Cool completely before frosting.
Cream Filling / Frosting
Step 7: Make the Cream
Beat cream cheese and butter until smooth.
Add powdered sugar and vanilla; beat until fluffy.
In a separate bowl, whip heavy cream to stiff peaks.
Gently fold whipped cream into cream cheese mixture.
Step 8: Assemble
If using layers, spread frosting between layers and on top.
If using a 9×13 pan, spread frosting evenly over cooled cake.
Step 9: Garnish & Serve
Sprinkle with chopped walnuts.
Chill for 30–60 minutes before slicing for best texture.
Tips
Use very ripe bananas for the best flavor
Toast walnuts lightly for deeper taste
Store covered in the refrigerator for up to 4 days
